The first module of the master's program is Professional Olive Oil Tasting.

Through this module, you will gain a detailed understanding of the process of producing Extra Virgin Olive Oil, from the field to packaging.

You will become a Master Miller with quality knowledge.

You will understand what defects are and why they occur, and you will be able to analyze a mill with professional criteria.

You will get close to the experience of great master millers with award-winning EVOOs and extensive professional experience. You will be able to address any doubts or concerns about the production process to achieve quality EVOOs.

You will learn the key points in oil production, as well as how to optimize the mill you work with. Additionally, you will learn about the most common mistakes and how to avoid them.

Olive Grove Management and Pruning

You will learn from technicians and professionals with extensive experience in olive grove management. You will obtain the key points to achieve a healthy and productive olive grove.

You will see the most common mistakes, the key factors that influence the behavior of the olive tree, and you will acquire first-hand knowledge of best practices in olive grove management.

Whether you have your own olive grove or not, it is crucial to have this knowledge. The state of the olive grove will determine the final outcome of the harvest.

You will be accompanied by a specialized teacher and a tutor who will guide you in everything that interests you for your project.

Exportation and Commercialization of Extra Virgin Olive Oil

This module will allow you to learn strategies, procedures, and tools to initiate, boost, and improve marketing and internationalization in the Olive Oil sector.

You will gain a global view of the current situation and future prospects of olive oil, both virgin and extra, in international markets.

You will delve into fundamental aspects for the proper management of Olive Oil exportation: transportation and logistics, sending samples, incoterms, quality control, labeling, among others.

Training in Extra Virgin Olive Oil Tasting

Once you have completed the tasting module and while you continue with the rest of the modules, you will be able to continue training in Extra Virgin Olive Oil Tasting in a continuous and convenient way.

You will receive a monthly set of real samples of EVOOs, and you will be able to compare your tasting results with those of the Independent Tasting Panel of ESAO on the Campus.


Group Sessions

Each module includes a group session led by an expert specialized in each subject.

This is a live online class where you will interact with the expert and get to know your fellow classmates.

This way, you will feel accompanied while hearing from expert hands about the subject matter, making it an engaging form of learning.

You will directly apply the concepts and approaches acquired, thus beginning to put your knowledge into practice and seeing how you develop your project.

It involves planning around a set of coordinated objectives.

A real project, supervised by your tutor, who will contribute their experience and guide you as needed.

Internship Day at Accredited Mill Optional

Master's interns in the olive oil mill.

Internship day at a mill accredited by ESAO.

This day will take place during the harvesting season.

The goal of the day is to firsthand experience an example of high-quality production, from field collection to final product processing.

(*) The development of this day is subject to weather conditions and the specific circumstances of the mill itself. Your tutor will be coordinating and supervising these internships to make them as interesting as possible.
