The tasting panel is the necessary instrument to carry out a sensory analysis of virgin olive oil.
What does a tasting panel consist of?
It is a minimum group of 8 people. These people have been previously selected for their special interest in tasting. These people are trained weekly, especially in the defects of virgin olive oil. In this way, training weekly and especially in the 5 main defects that are stipulated in ICO.
Every week, the tasters taste and sensory analyze samples unknown to them and score them. Subsequently, the head of the panel collects the results of each panelist and draws, through statistics and in a standardized manner, the classification of each sample, based on the scores of the panel member tasters.
It is convenient that this training is always carried out by more than eight people so that in this way, if there is any loss, always have the basic minimum of normalized panelists.
